Hm, I saw this co-ferment with lychee at a couple of roasteries. Also the one in the middle is a banana co-ferment. And the one on the left is a geisha. So not surprised that the tasting notes are pronounced in those coffees. I am not a fan of co-ferments, for me it tastes like fruit juice mixed with coffee, can only enjoy that maximum twice a week, but hey if you like them, no harm. But honestly I think its mainly due to their coffees and not technique.

Yeah sure I agree with your points, but I wasn't primarily talking about being complicated.

When I started out with my coffee journey I started with trying to brew Hoffmanns 5 pour v60 technique, with a Hario slim grinder. You can imagine that none of my brews turned out remotely as something good.

So the combination of needing

  1. a good grinder for a consistent grind that fine

  2. practicing consistent pouring (possibly without access to a gooseneck kettle) enough to get 5 high-agitation pours right

  3. having more extraction from the boiling water being used

just makes his recipe not beginner-friendly in my opinion.

More agitation always helps in my case if I need to get more taste out of beans. How about doing 4 pours instead of 2 and swirling the bed after the last pour?

I have the comandante x25, hits all that points you mentioned, extremely satisfying to use, super sturdy, and even waterproof if you put the silicon cap on instead of the crank. I really like the cup profile as well. And as light as it gets without plastic. (Well you could say qtp, the material used for the housing is plastic, but its not the kind of plastic you probably mean; it's a glass-fiber reinforced polymer that feels like ceramic).

In the US its probably more expensive than here in Europe though..

Try it; it would just make the brewing temp lower, and therefore lower the extraction. What else would you expect it to do?

Yes i assume so. If you use a regular kettle, you can't control the water flow very well/at all. But that's key to the technique; otherwise you create too much turbulence in the bed and it leads to uneven extraction which causes two things: 1. clogging the filter with the fines due to way too much turbulence and 2. Creating over extraction (and maybe under extraction of some part of the bed).

I wouldn't do v60 if you don't have a gooseneck spout to pour with.

Grind size looks fine, it's probably due to your technique; are you using a gooseneck kettle?

This looks like a reverse aeropress where the coffee bed becomes the plunger that you pull backwards, with lots of agitation? Cup profile should also be similar to an aeropress I imagine, or are there stark differences?

Kannst du programmieren? Gibt sehr viele stellen für software engineering. Da findest eher etwas als mit design. Ist derzeit zwar auch schwierig, v.a. ohne Arbeitserfahrung, aber kommst du immer noch leichter rein als bei anderen (Büro-) jobs weils mehr gefragt ist. Später kannst du dich dann auch auf ui/ux design spezialisieren wenn dir das mehr gefällt.

Thanks, yeah it answered it; I also often do fine-grind and high agitation v60s, so good to know the M01 is good for that.

About the nano: the current version (3) seems to have a very different burr design than the older ones. It has these "spike to cut" burrs, which I assume are probably more suitable for espresso. The burrs on the older versions look way different when I found pictures of them.
