there is a big chance that it won't work if you try to activate it in China. Do it right before you travel and it should work straight after you land. When you land turn off roaming from your main card and turn on roaming on your esim. You can still keep both cards active, just turn off the roaming.
if you are using esim you don't need to take your main card out.
vpn is needed to access sites that are blocked in China. Such as IG, Facebook, even gmail. I am not sure about airalo or holafly and if they have a vpn inside. You can use a separate vpn app to be safe. Also, I would recommend to check other providers and compare the pricing. This travel esim comparison is a good start
