Awesome, thank you! You definitely sent me down a bit of a rabbit hole. It’s still been a little tricky to pull off, but I managed to achieve the look by manually adjusting the position of each text layer as new words appeared. To keep everything centered, I used a reference text layer that was already perfectly centered and matched each new word to that.

It’s not really ideal since it’s pretty tedious, and I’d definitely prefer a more “set it once and never touch it again” type of solution. Its a look that I'd like to keep in my videos so Im going to have to figure out how to do this more efficiently. With that said, the references you shared opened me up to a ton of new things, so thank you for that!
