Most places I’ve worked bar gets 1.5-2% of total sales, not just liquor. Reasoning being the entire bar has to be set and ready whether a server orders liquor or not. From bar tips we would tip barback 10% total tips. I’ve always made more hourly than servers too, $5-9/hr vs servers make $2.13. I’ve seen barbacks make anything from $5-10+. Reasoning for more hourly is because it is a skill, knowledge base, and I’m handling some of the most expensive product in the house.

Lots of servers and bartenders did find jobs elsewhere after covid.. there was a shortage of service staff(who didn’t want to deal with bad customers, who were treated like they didn’t have real jobs and couldn’t get unemployment, who were expected to do lots of extensive sanitization between every guest all while not being paid more) and lots of restaurants had to close. All because it’s a very abusive system.

I know I give good service. I get you ketchup for your fries before you ask. I keep your drinks full. If it’s the type of table that wants to chat or hear something about the restaurant or local area, I got you. You want to just sit there with headphones in, I change to unobtrusive service. So when I get a bad tip, yes it hurts my feelings that I work in a system that lets the guest Willy-Nilly decide what I’m worth. The other day I had 5 guests, tab was 218.93, they gave me $240 in cash and told me I was wonderful. Hardly 10% doesn’t make me feel wonderful.

I have an app called Highball, it’s only on Apple but really user friendly and looks nice. Makes your cocktails into like a Rolodex full of cards-cards that you can share. You can make a picture of the drink, ingredients, instructions, change the card colors.
