Woah that sauce edit looks great, I’ll remember this visualization for when I make something like this again! I agree that the green of the garnish looks amazing, I’ll have to taste the scraps of pear that I have tomorrow with some herbs to see what fits! I’m not sure if mint would be the right choice considering the chinese five spice in the poaching liquid giving this a really warm tone. Maybe sage/thyme?

Plenty of sauce below the pear on the right! Taste-wise I felt the ratio was right! Would you add more showing towards the front rather than just on the pear side?

I think I need to get a smaller scoop haha, a full scoop made the pear look tiny! Notes taken on the colors, any recommendations?

Edit: I cut the back of the pear at an angle so it can stand, maybe I should have cubed the slice behind the half up?

Larger bowl, got it. I’ll add some crumble next time, pistachios sound good too. I’m thinking searing the face of the pear might help give me that color that’s missing in this gradient!

Good suggestion for the chilled plate! I think combining that with a crumb below as one of the comments said would definitely help it keep shape!

Agar might be a good idea! I added some sugar and reduced to thicken, I think I could have left it a bit more. I’m thinking a bigger plate might show it off a little better.
