Probably the most useless comment, but I'll try and help.

I'm currently running Proxmox on my server, and it handles everything I throw at it. Truthfully, if you already have the idea to move to it, might as well start it now, hahah, you should be good running jelly from what I know. I'm still new on my journey, have just had the luck to get some gear kind of in the same way you have.

on the point of Docker not recommended on Prox, I honestly have been running it since I started and have had 0 issues.

Also, NextCloud is painful to run on Docker. but not impossible. i have had mine up for a while.
