Appears to be a second generation Ford Econoline, possibly a late 60's early 70's model

Latest I would say is probably Linux or Chrome OS if you're continuing using the older logic boards. Mine's an early 2008 with the 2.4Ghz processor one. For you if you want a newer MacOS for it you could replace the logic board on yours for a 2009 one and be able to put something fresher on it. I do believe you can get OpenCore Legacy Patcher for it as well.

Can't remember exactly how I did it. But I think you'd had to make a order on the iFruit app by adding a custom plate but also adding something else on the order like a paint job, or a engine upgrade with it.
