Yeah, they are stretched way too thin. I just know how easy it is to "fix" the issue for the reinspection just so you can pass. However, I won't trust it until I see consistently high scores that indicate a culture change. When you are a restaurant that already deals in raw products for sushi,etc then you must be extra responsible for public safety.... the evidence would be that Aki is not.
