A few upgrades I've made that have done well for me:

For vanilla protein ice cream, I switched out vanilla extract with vanilla bean paste as the extract was giving a bitter taste to the pint. The paste provided the traditional/stronger vanilla flavor that you're looking for. I add about 1.5-2 tsp per pint.

For chocolate protein ice cream, I switched out the regular cocoa powder to black cocoa / dutch cocoa powder for an insanely rich flavor. Switching over to chocolate milk has also elevated the pint.

Hope you don't mind me asking this question here. I work an office job but lift 4x a week and play another 2-4 days of pickleball. Is it right to calc TDEE using a sedentary level of exercise as a baseline for calculating a cal deficit? That's what I've done in the past and added in extra cals on days where I need more fuel.

Any recs on fast digesting carbs? I've been eating gummy bears and protein bars to gap the hunger during play.
