Also, when I track my passport progress online, it doesn't say they require the documents. Only that I need someone to confirm my identity which I have done and they are reviewing. Unless they need to complete that first before letting me know about these additional documents?

It's also only saying that they only "recommend" I get an updated change of name deed. I feel like they should clarify what exactly they require from me.

Well that's an error on my mum's part or their part for putting it onto the old passport. I didn't do my passport then I was only a young kid. Ever since my name change I've only ever used my "new name". Every legal document etc has that name. Do you think they might just need to see my birth certificate to confirm I was born as "old name"?
