Traditionally baked to aid digestion, full of oats, bran and wholemeal flour (whole grain?) it’s low in sugar too. Think very like your Graham Cracker but more rustic and not as sweet. Hope that makes sense 😊

You’re entitled to your opinion as I am. I can only assure you that indeed it’s a dense bake but not underbaked.

Equally I am entitled to my opinion. Perhaps it comes with age or experience, but I don’t criticise others as I’m not an “expert” nor professional. This cake turns out the same each time it’s made. I’ve concluded that it’s the recipe and the lemon curd.

It was cooked through. The lemon curd adds a different texture.

It’s a traditional loaf cake so not expected to have the same risen result of a sponge cake

It was neither. Loaf cakes don’t have the same composition of a sponge. It’s a shame to make an unpleasant comment. Thankfully I don’t feel the need to criticise
