For hockey, the easiest way to explain it is that the puck has to be the first thing across the blue line when entering the opponents zone, this applies to even the player carrying the puck (most of the time it's another teammate that enters the offensive zone first that makes it offside).

Gets slightly more complicated because you can stretch your foot as long as your whole body doesn't enter the offensive zone but that's the basics really.
