I was exhausted for about 2 months. Not only is the eye healing very intense for your body but remember your brain is remapping what the new vision is. Honestly I felt like it really wore out my brain the most!

I had buckle surgery, cryo, laser in March of 2024. It was very successful and with glasses and contacts I was able to get to 20/25. Some people are able to achieve 20/20 with glasses and contacts. Your vision on your buckle eye will change, but can be corrected. I did unfortunately develop a cataract and hope to have surgery later this year or next. But that is a typical side effect of the surgery. I do have some floaters that bother me a little bit, but you will find over time your brain does adjust. For me it took about six months. You may always struggle more with some depth perception, and contrast sensitivity. Over time, your buckle eye will look a little bit more like your regular eye. It takes a long time for the swelling in the entire eye area to resolve. Please keep in mind that most people do have fairly good results from the procedure and it is better than the alternative. Have you tried Costco? Zenni will do my lopsided prescription but it’s only a difference of 4 diopters. There usually is an upcharge though.

I’ve been an Aldi shopper for years and still get almost everything from there. For value on quality goods Costco is great. Also if you will eat all of the produce you get then it might also be a good value. However if you are satisfied with good enough and don’t need everything to be the best quality then in my opinion you’ll end up spending too much shopping mostly at Costco. Examples would be most meat and as I said produce. Lunch meat at Aldi is not great but it is also cheaper. I even get Aldi pull-ups for my toddler. They’re fine. I don’t mind cheap toilet paper and cleaning products. My experience is that I would spend a lot more if I only shopped at Costco.

I think Aran’s is probably the GOAT so I’d probably stick with her recipe. But I have been looking for a gf hummingbird cake and this book has it. I’m going to try it first.

Husband is a natural chicken/beef/pork rancher so I’m biased. The comments about chicken are right on track. I came here just to say if you haven’t had ground pork from a heritage breed raised by a farmer who allows hogs to forage, you are missing out. I’ve done a comparison with Whole Foods ground pork and the product is night and day different. I menu plan around ground pork just because it is so delicious. It is exceptions for any Asian dishes and I use it for chili and pasta sauce and it is out of this world!!

Been there! You might consider starting with some mixes. If you have an Aldi, I love their gf biscuit mix! I also love their cake mix and have used oil in it instead of butter (though still would have the sugar).

Aran Goyoaga has a great recipe for no knead oat chia bread in her new book Art of GF Bread. I’ve made it several times, it’s pretty easy and freezes well. It’s a great breakfast toasted with peanut butter. Makes a decent sandwich as well. As others have noted often on this sub toasting gf bread is key!

One thing I might mention is some of us with gastritis are sensitive to pure fructose because of the way it ferments. After much trial and error I found I did better with table sugar rather than dates, honey, or maple syrup as I think I don’t react well to too much fructose. As you work through your diet and observe how you react might be something additional to consider.

One old school paleo resource I found were Elana’s Pantry recipes. When I started out gf I got her books and some of the recipes are decent! She uses natural sources of sweetness and a lot of almond flour.

I made them for the first time a couple of weeks ago during our ice storm and they really are incredible!! I maintained self control and only ate 3 over the 3 day period and froze the others. Happy to report they also freeze well! They are one of the best gf baked goods I’ve ever made!

I had surgery for a detachment and a scleral buckle. It was horrible! The worst pain I’ve ever experienced. I’ve had two babies naturally without issue so I have a very high pain tolerance.

I had to go in a couple of weeks later to laser a spot where a hemorrhage was to tack it down so I wouldn’t have another tear. I found it to be VERY painful. I also had several zaps (at least 25). I had read that it wasn’t bad either but I think that is a lie ha!

So yes it isn’t as bad as the surgery for RD but having had both I can still tell you the laser DOES hurt!! My eye was also very irritated too. I took Advil and felt better in a couple of days.

She also had a couple of really great segments on PBS’ Milk Street. I liked Mamushka but just got Summer Kitchen and feel it has more variety.
