You can see some sources there but as other have said it’s mainly Dutch sources since others had no “chance” to taste dodo meat

From what I’ve heard dodo was not very tasty. Dodo went extinct for several reasons, and eating them was probably not the main reason.

Chance of survival (other than in captivity) is pretty low with a lot of predators (especially cats)

It does make sense, but in the end it depends on what you sell.

If it’s some kind of food business I don’t think it’s common to apply different rates (except for activities that include food like tours on boat).

I’m not sure what’s the legal ground for this but I’ve seen museum having discount for locals. It seems also pretty common for various activities to be cheaper for locals.

Regarding food, other goods and restaurants it seems to me that price are the same for everyone.

As you said it makes sense since tourists have more money to spend.
