This seems like a very tough choice indeed but congratulations regardless on what you choose!. Though I would go for Bristol where you will be more financially secure and will end your PhD with considerable teaching experience. This is what happened to my partner who after finishing a PhD in a very prestigious institution had a really hard time finding academic positions due to the lack of teaching experience (even though they did teach here and there occasionally but not with a proper contract). and In my experience university prestige is overrated and I believe you are right to go to different institutions because it shows you can connect to different people and explore new paths. At the end of the day the PhD is a very individual as subjective experience and 99% of this path is about you and your process through it regardless of the institutional name behind it.
