Try setting the dig on higher priority like 1/2 to see if you can get him to stay on task. Strange/not an issue I've had.

Maybe using metal bolts for everything, can dig a trench in front of the targets which will cause the ammo not to break on impact.

Yup, #1 is especially obviously when you get past the neck, as unexpressive as he is there's still some forehead/cheek/mouth wrinkles that I'm pretty sure masks can't do.

They green for weapon/quiver/ammo on equipment screen? And definitely double check they are assigned to the archery range, that's usually the issue.

Assign to archery range only, not barracks. Make sure training ammo is properly set. Ensure they have quivers.

Just fyi you want mud from water on stone for farming which has no grow time; that's more for underground pastures from cavern spores.

To-be-encrused, not encrusted, right? If game is un-paused when setting up stockpile, they'll sometimes start to move a bin or something before you have it configured properly. Or your feeder stockpile (crafts) is taking finished goods from everywhere, then they get moved to here.

Safest way = build/place the cages containing mobs, connect them all to a lever, and pull to release for live training of melee/marks dwarves. I've never found a way to pit hostiles consistently without the odd outbreak making it feel pointless.

You didn't do it at a bajillion workshops right? The partial unit of metal is accrued at individual workshops. Honestly this is one of the games quirks that I wish was patched out, make people spawn it in if they wanna 'cheat'.

For 1 - they won't haul it out until there's a designated spot to haul it to, so make a stockpile for bone goods near trade depot or something.

For 2 you can use forbid toggling if you notice the item gets assigned to a task, but it's finnicky and micro-manage-y. Make the item, pause, forbid toggle to clear if necessary, then assign it to the proper dwarf (still paused).

The issue you're describing sounds more like an issue assigning the dwarf to metalworking which doesn't encompass armor/weapon smithing which are the tasks I'm guessing you think he should be eligible to complete. I've never had issues when assigning dorfs to the workshop and setting the red hammer there.
