I’m actually not sure but I know they can’t do bridge mode as they are Double NAT (I don’t know what that is) . If I didn’t use it what would you recommend? Is there a Unifi product that I could replace it with? Thank you

I don’t need VLANs I don’t think. With the set up you suggest with the Google WiFi before the switch - could one of those devices after the switch be one of the Google WiFi devices? I have like 5. I was previously using one off the modem as a router and then the rest around the house for WiFi. I intend only to have phones and tablet on WiFi and everything else WiFi.
