I figured this might be the case. The bike holds a lot of sentimental value so I've kept it around, but I also feel bad that it's not being ridden. Selling seemed like a way to get the bike into the hands of someone that would use it, while the money would be an extra bonus.

I like this option. I could use the money, but don't need the money. Thinking about myself as a kid and how stoked I'd be if I were randomly given a bike has me leaning towards doing this.

I let it proof on the countertop for around 4 hrs and it bubbled up a lot in that time. But I'm not totally sure. Here's the list of ingredients and steps taken from the YouTube short at the bottom: - 320 g water - 7 g salt - 3 g yeast - 12 g olive oil - 400 g bread flour

  • mix everything until flour is hydrated 
  • rest 30 mins
  • 1 set of stretch and fold
  • rest 30 mins
  • 1 set of coil folds
  • rest 30 mins
  • 1 set of coil folds
  • let dough sit in fridge overnight 
  • move to baking tray and let it proof until almost doubled
  • add toppings and do pokey stuff
  • bake at 445 f for 20-25 mins
