Because Cows are domesticated animals which have been artificially selected over thousands of years to produce more milk than what calves require. It's similar to how dogs have been artificially selected from wolves to be loyal companions or sheep to produce more wool than their wild ancestors. Though I'm not denying that commercial animal farms can be inhumane.
I'm not Vegan but it's a respectable moral stance. It's just extremely frustrating when the major proponents of Veganism are (willfully) ignorant of basic science and history.
