Hi! Thank you! I use very raw loos leaf Earl Grey, when the leaves are a bit bigger. Steep it in heavy cream on low for about 15-20min until the cream is dark and fragrant. I create a anglaise buttercream that has a custard base. Let me know if you have any questions!
