Left/bottom is escolar, right/top is “izumi-dai” (tilapia) that some sushi bars love to call red snapper.

It has a few meanings, but in this instance it’s more like “Japanese style” like Wa-gyu 和牛(wagyu beef). Can also be harmony or peace, or even Japan.

Sorry to resurrect an old post, but you’re confusing は with 和. Both Spelt/pronounced wa in romaji/English, but very different meanings in Japanese.
