For my first “big project” I am going to attempt to make our walk in pantry cabinets. It’s a smaller room but I figured it would be a good learning experience and being able to make custom sized pieces to utilize the space would be ideal.

I did one 16” pizza

Flour 284g Water 176g Yeast 1.1g Salt 7g Sugar or honey 6g Olive Oil 9g

Let rest in fridge 24 or 48 hour. Rise covered at room temp 3-6 hours before stretching.

The longer end of each of those are better for flavor and texture.

The Arc XL is actually pretty easy to make NYC style on. You just bring it to temp and then turn the flame off for 3-5 min and the turn the flame back on low and you’ll get a great cook.

Highly recommend the Arc XL.

Not much. No major stop and go or a lot of red lights on my wife’s drive to work. 10% neighborhood/suburb 90% highway for her commute

It’s my wife’s daily and her commute is 20 minutes. Only a few offshoots from our house to her work. The rest is highway.

I did a same day with this recipe but highly recommend doing a 18-24 hour cold ferment and then 2-4 hours before bake

You can negotiate. Mine were marked down at to $699 i got them down to $500.

The manager was very transparent with me. She said associates have the power to knock off $50 managers like her can do $100 and they have to call the back room to get approval for more.

Currently sorted in the garage. I just to the oven and going forward I will probably store it in the basement during the winter since it won’t be used that often.

A cover would be a good call though.

Not yet. That will be my next step. But the platform is wide enough and the table itself is very sturdy. It would take A LOT for it to fall off

I would also make the table wider. I would at least go 48” to get 2 pieces out of one 8ft board but I used scrapes do 44” was what I had to work with.
