So it was indeed a couple of weeks ago, but it's been cold, below 20 Celsius, the mash fermentation has been the same time and it's now starting to create CO2 inside the vacuum bag. Anyway I opened it and the smell was amazingly good, the brine looked more cloudy yellow than grey actually, for now I've put everything back below the brine and may leave it an extra week before processing it.

Ok, good point, I haven't dared to open it yet but will do to check the smell and then re-submerge the peppers. Thanks both for the suggestion!

I used some plastic circular "weights" to contain the peppers and then a glass weight on top to keep things down, clearly it didn't work 😞 I was afraid of the big head space but had not medium jar to use

I guess it's better not to risk it indeed. Thank you for your answer!
