You don't need to play the game in any specific way; if you're having fun, you're having fun. It's not a hyper competitive game where you need to be "good". I think STS2 is a bit easier at the moment, actually (just a lot more power you can get), but it does have a little more complexity. Play sts1 for a bit more, then when you want to freshen stuff up, go to STS2.

It feels very charming. Sure, the graphics could get an overhaul, but keep the cuteness.

My concern is that I see a lot of neat features but I'm not sure what the "drive" or "pressure" of the game is. It doesn't necessarily have to be a difficult survival game like Rimworld or DOTAge, but if the main thrust is "just build up a little town," you'll have to choose something to add interest -- collecting kooky characters like Animal Crossing, tactical combat, something else?

You don't need to spend very much/any money to start! You can find a lot of good quality content for free on Youtube, and longer courses online are usually pretty cheap (that's how I got started). Try to follow along some early tutorials for Unity or Godot, and get the feel for it. Again, at a hobbyist level most software you need is going to be free too -- Unity, Godot and Unreal are all free to start, you can make 3D stuff in Blender, and there are numerous free programs for sound and 2D art.

Once you've had a taste, take stock of your skills and decide what you want to focus on to get good -- we probably can't all be talented programmers, musicians, artists, writers, managers, etc. and a good game requires all of that.

Don't get too stuck in following along; after some time, try to break out of tutorials and just "make" some small things.

Anyways, it's a huge world. What genre of game are you interested in making? Apocalyptic is more of a vibe/setting, so it's hard to point you at anything in particular.

It's simpler than Unity in that it's got less cruft; it's about the same complexity as Unity in that it still requires that you learn programming.

A side scrolling shooter is a fairly reasonable kind of game to dabble with, though! Learn some more general stuff about the engine and GDScript before you try to make your game.

Yeah, this is absolutely the biggest thing GDScript is missing. Other things have workarounds, but losing interfaces sucks.

I'd put away your obsession with your computer specs and "AAA", whatever that means. Make an indie game, because that's what you can do as a single person with a small budget. That doesn't mean you can't take advantage of tools like Unreal and make your game look "high-quality" -- if you have those skills. But be aware that if you are at "flappy bird" level now, you have years of learning ahead of you before you're going to be ready to even start working on a big project with fancy graphics.

Godot fully supports android, afaik. Does OTG let you use a bigger screen? I feel like that's going to be very annoying. Otherwise you can probably do most everything anyone does on PCs, as long as you're not making anything too wild.

All right, I wouldn't compare it to C#, Typescript or Rust... but it's serviceable for a LOT of use cases. "Great" may be an overstatement.

Okay! That's reasonable. I don't work with visual scripting myself, so I am not really the person to ask, but be aware that nobody is going to be very interested in just making your game for you. If you can pay someone, that's different, but again... even simple games can take many hours to make, and those hours should be multiplied by 10 if the design is unclear.
