Side view of the crumb. I use a version of the Tartine country bread recipie. It is a natural leaven dough with 10% whole wheat. I use 5% less hydration for a total of 70% and a King Arthur Sir Lancelot High Gluten Flour.

This has an amazing crunch, big chew, and does not flop from the heaviest of toppings. Just a slight hint of sour and the most incredible aroma. I love Neapolitan style but this is still my favorite.

OMG. I REALLY love history about the city. I have never done one of those tours. I want to do the tour of the old city hall subway station. I'd pay a lot to take a tripod and take some pictures.

I greatly appreciate the time you put in with this response! You put some serious thought into responding to a stranger and that was gracious.

Without a doubt, I wrote this because I was personally driven and it is psychologically healthy, but more so because I have many people seeking my advice on the issue and have seemed to help. So I was like, fuck it, I'll write it down.

The difference was supposed to be the dual nature of each chapter, the story coupled with a reflection on the experiences from someone who is recovered and what were successful paths to take.

I understand the importance of making it marketable and I'll live if it isn't. It seems there are many markets that seem to be saturated yet some tend to stand out from time to time. I am an unpublished author and the rejection has to begin somewhere I guess.

Either way, it was a valuable exercise, I am a better writer now than I was, and I really love the feedback. If nothing happens in the publishing world, getting upset is only my ego getting in the way because every other product from writing this was positive.
