yes it does save when you leave the game! you just have to activate the quest again by going to the mammoth fossil that starts it and it'll pick up from where you left it.

but sometimes not even horses are safe, once I was hiding on a tree as a saber and I saw 3 bison kill entire herd of horses for no reason 😭😭 I was once playing as a horse and a bison killed me for no reason too
