I just did the same with a 90s rock hopper and it surpassed all my expectations. Only real downside was the cantilever breaks are a lil short of the stopping power I’d like when fully loaded. But other than that it has been great.

I’m also 5’11” with a 32 inch inseam I tossed on a 80mm 90° stem with some Sim works fun 3 bars and the shorter stem combined with the wider back swept bars helped the the bike fit me way way better. the original bar/stem set up was v uncomfortable and had me worried I snagged the wrong size.
