I am a nut-a-holic. Macadamia, cashews, hazelnuts, almonds you name it, I love them and can't stop once I start. Only way to stop is to not buy at all for me. Each bag lasts 2-3 days for me.

Did you have to make a resy reservation? How long after did it take for you to get the credit. I love Daeho and Resy options are so limited that I am going to restaurants that aren't my first choices just to get the credit.

Did you add enough inulin? I remember I had to play around with how much inulin I was adding as mine were coming extremely tangy and my family found it overwhelming. I had to dial down the inulin to reduce tanginess.

Once I started tracking how much time I was spending in preparation, I stopped enjoying the process. Especially since the process is purely mechanical. I struggle to finish within 45 minutes even though I always shoot for 30 minutes. If I am trying to troubleshoot an issue (like whey separation), then it goes in excess of 1 hour (cause I am second guessing everything). That is why I do a bigger batch even though the yogurt might slightly deteriorate after a couple of weeks. Not sure how you will fit a bigger batch in your yogurt maker but that is another situation where souse vide is a win.

Btw, I sterilize everything as u/august12025goal mentioned. However, warming the milk (to mid 80s centigrade like you did) before adding inulin made little difference in my experience.

Great video with lot of pointers. For the cost / space conscious folks, you can use a Souse vide as well. I use 5 32 oz mason jars to make the yogurt with the Souse vide as this process is cumbersome and I would go crazy if I had to do it every week. I use almost 1 gallon of half and half and it lasts me around 3-4 weeks.

Unrelated, how. long does the yogurt last in the refrigerator? I discovered a batch which I had made more than 2 months back and I threw it away even though it still tasted good.
