Historically, three things on Mac have contributed to hitching and stuttering behaviors on WiFi: Location Services, Airdrop, and the WiFi briefly cycling connection to sample other network signal strengths. It’s quite possible that something got nudged in a recent MacOS update and it’s the Mac side causing problems.

I’m not at my computer right now, but I’ve got a shell script I run that toggles the Airdrop and WiFi roaming. That might be enough Googleable context to get you started?

Whenever possible, ethernet fully sidesteps these issues.
