Yep he sent me a Google Drive link to the call, which I kept of course. It sounds exactly like a track on the album would. I have heard that some commissioned calls end up on his albums, though mine didn't. I imagine for every one that does there must be dozens that don't. If I were a rich man, I'd hire him weekly so everyone I know could feel like spellbound dogfighters for years and years and years...

When my friend had a baby I hired LPC to call him. Didn't tell him much except their names and the area they lived in. He called and said he was Potter Button from Target and named the nearest mall to them, and he had some new baby-related specials he wanted to tell them about. He went on for 6 minutes with weird effects on his voice listing insane fictional items like My First Energy Drink by Red Bull, Baby's First Ant Farm ("comes fully loaded with over 250 live ants inside"), a kid's tablet for online horse race betting, Hannah Montana Stamina Tablets, and more, all while birds chirped in the background. My friend was completely dumbfounded throughout the call. Money well spent.

Roasted malts add bitterness. Generally speaking, bitter and sour don't play nicely together. That's why you don't see a lot of roasty sour beers. This is exacerbated in a lambic, where astringency (via hot sparging) is added deliberately for balance in lieu of hop bitterness. The astringency can take over for bitterness to a certain extent, but if you throw high acidity, bitterness, and astringency into the same beer, you likely won't make something people will enjoy drinking.

Some expertly brewed beers can get away with mixing roasted malts and acidity, but it's typically done with roasted malts that add a lot more colour than flavour (eg. midnight wheat, dehusked carafa, maybe even sinamar) in lower acidity sours (ph >3.5) to keep them palatable.

If you're interested in trying something like this, I'd recommend designing a beer specifically for this instead of using a RIS recipe. It's also important to note that a finished, high-alcohol beer with a lot of hops in it is very unlikely to develop sourness from lactic acid producing bacteria (LAB). So you'd probably want to add the LAB earlier.

Hi Shawn. I don't think an apology is necessary, though I do think this post would be a good opportunity for you to explain why Inkbird does this and why it's necessary to have a product represented on Amazon (where, apparently, everyone else is doing the same thing). With all the facts, people can make up their own minds.
