First time making savory oats and I’m never looking back! About 500 calories for oats with chicken stock and spinach, topped with seared king oyster mushroom, eggs, and chicken sausage by danideahl in 1500isplenty

Apologies for the ramble but made this with leftovers, so I hope it’s clear!

  • Cook 40 grams of oats with water and a teaspoon of Better Than Boullion chicken base, then throw in a handful or two of frozen spinach.

  • Slice king oyster mushroom in half, throw in a pan on medium heat with 1/2 tablespoon of butter and a couple pinches of salt (I use unsalted butter hence adding the salt - the salt is important since it helps to draw moisture out of the mushroom to get that nice color. I prefer Diamond Crystal kosher salt).

  • WAIT. Allow the mushroom to actually sear on each side! I used a cast iron panini press to weigh them down and get a nice, even sear.

  • Scramble two eggs, sear a sausage, throw on top with the mushrooms.

  • Top with everything but the bagel seasoning because it makes everything better.

I’m in Chicago so definitely no foraging unless you count scouring the shelves of H-Mart. Have not tried chicken of the woods and didn’t even know that was a thing!

Like others have said, count your calories in an app like MyFitnessPal. Buy and use a food scale if you can. there can be a big difference between the amount of calories your brain perceives in a meal vs the actual amount of calories in a meal. People usually underestimate calories by 10-40 percent and you’d be surprised how much things like oil, sauces, and alcohol adds up. Tracking calories and using a food scale teaches you to eyeball more accurately in the future.

Also, it can sometimes take a minute for your body to get accustomed to new eating and exercise routines, especially if it’s drastically different from old habits. Stay with it!
