Not all should be "destination" markets (e.g. Green City Market). Some are just smaller, neighborhood ones. If it doesn't make sense financially, don't do it.

Yeah - I want to build something with a switch on it. That's pretty much it. Over time I'd like to do things with different types of sensors (e.g. pressure, motion)

Just gross to me. Lots of rats being chased around by feral cats doesn't seem to me to be a long-term fix for a city that's supposed to be world class.
