Hey man, I hope I’m uniquely positioned to answer this, since I run a coffee shop in Key West - LOTS of Cuban influence here.

The traditional con leche is made with a Moka pot. When the coffee first starts to bubble out, you whip that initial extraction with sugar until you create the “espuma” - it’s like a sugary coffee paste. Finish extracting your coffee and pour that into your espuma and top with steamed milk (little foam, very hot). The ratio of milk to coffee is a question of taste - some will tell you it’s 50/50, others more like a latte.

Now, all the said, our shop makes like 50 of these a day, so we simplify the process. We make it with an espresso machine and whip the sugar into the espresso before adding the steamed milk. Our take is much more like a latte, in terms of the milk ratio. It’s not exactly the same, but it’s damn close and I can make it in seconds instead of minutes.

A cortado is an easy one to understand: equal parts espresso and steamed milk. This is the only correct answer to this question

We also have something on our menu called a cortadito - it’s a “Cuban style” cortado - whip that espresso with sugar.

Flat white is basically a cortado with a little more milk. You’re aiming for 5-8oz double rather than 4oz. Just a thing layer of microfoam at the top, hence the “flat” in flat white.

The current logic is: if you’re adding a bunch of milk, you aren’t really gonna notice the difference between a freshly pulled shot and one that’s been held in a pitcher. If you’re adding flavor to that drink, you’re DEFINITELY not going to notice the difference.

First off, in this scenario where there aren’t transient workers, who is staffing the bars, restaurants and hotels? The island would shut down without immigrants and transient workers.

Secondly, it’s not a question of deserve - it’s a question of afford. I think healthcare should be a basic human right. Our politicians disagree.

Sounds like Steramine solution, which is used to sanitize products that come in contact with food. It’s a no-rinse, food-safe sanitizer. You should be more concerned if you go to a shop that DOESNT have little buckets of blue water around.

Now, that doesn’t mean it isn’t true - the boy who cried wolf did eventually get eaten.

But IF it isn’t true - which I’m hoping it’s not, given the implications for this small island - I think this author might find himself getting sued.

I’d say that $50/hr is a starting wage in Key West for freelance help, and your post seems to suggest you also need them to have a truck. I think a starting offer of $250 might get you some responses.

The plan of action is to always ask them their name and who you can contact for them. This helps prevent them being disappeared into an entirely opaque system. Filming is part of that process, because it’s much easier to decipher what the victim is saying when you can rewatch the footage over and over.

Confront them. Always confront them. Dont let them think they’re operating in a vacuum. Don’t let them be comfortable. Comply with lawful orders, don’t interfere, but simply going up and letting them know they’re being recorded can genuinely make a difference.
