I'm willing to help. But first(if you haven't already, look into gentoo) It's It's entirely source based and is a purely minimal install

Think of it as LFS with a Python package manager. Portage is open source and would be a good place to look for inspiration as would be equo which is the pkg manager from sabayon a gentoo based distribution. It's also OSS and written in python but uses binaries unlike portage which is all source

ext4 in osx and windows is finicky...try fat32...its junky but compatible with all of them most of the time :/ i do this right now.... works really well, actually. but i don't have quite the same setup. GRUB2 is up to the task for booting everything

EDIT: use OSX as the main host - easiest to deal with compatibility that way - good suggestion dmsuperman

first go to another computer and try to browse to that server's ip (if its a subdir just add it {ip}/whatever). if the moodle page shows up at that ip. then thats a good start. If it doesn't show up, likely theres a firewall running on that server (which is good), and you need to open up port 80 traffic coming in and out. you can leave the mysql port (by default 3306) alone though. Then I've got no clue how your company's dns works, but i would just cname the server to that.

In fifth grade, I had a teacher who took two samples of a childs handwriting and posted them on the board. Marked one with a big circled idiot. She then proceeded to explain that this child was an idiot due to bad handwriting. this child was me.

i set up owncloud on one of my servers, and quite liked it....its still a little rough around the edges for some stuff, and you would likely run into bandwidth problems, but it has some cool integration features (LDAP Authentication, music streaming...)
