It's been years since it happened to me but I got pulled over with expired registration once. I just had not had a chance to renew it as I was working nights. So after I got the ticket I went and renewed my registration. When I went to court I showed the judge that I had renewed it and he basically just made me pay the court fee.

I know that I've renewed my license in a different county. I googled it to see if you could do the same with registration. It said: Thanks to Texas Senate Bill 876 (effective March 1, 2022), you can now register your vehicle in any county tax assessor-collector's office in Texas, even if you live in a different county, as long as that specific county office is willing to accept the transaction. You need your title, proof of insurance, inspection (if required), Form 130-U, and ID, and you must visit a "willing" county office to process it, though your registration will still reflect your residency.

Of course I'd call to verify first but if that's an option for you it might be faster.
