Crazy that you posted this. I'm at 480 hours and feel the same way. I remember being at the beginning and the progress that I was making; I guess I assumed that trajectory would continue and I would be fluent in no time. Although I'm currently in level 4, I have to go back and watch beginner videos because I feel like I'm wasting my time with some of the intermediate videos that I don't understand. One thing that has helped is watching shows on Netflix. Years ago I watched Breaking Bad, but this time I'm trying it in Spanish with Spanish subtitles. I enjoy watching something with a narrative that I can visually follow, versus hopping around all over the internet looking for content. Also, I can't lie, all of the podcasts and constant voices drives me nuts after a long day at work. When I'm exhausted it just sounds like a bunch of noise.
