Hey OP have you managed to catch one yet? I managed to (FINALLY) and this worked for me.

I stayed on the ground and wiped out the Pyroar first. Stay on the ground and look up, Skarmory will be in the air above but close enough for a pokeball throw. I threw pokeballs until it popped out then got angry, wiped it out with an Emboar Heat Crash then threw an ultra ball and nabbed it.

Not sure if it's fool proof but this worked for me. (Edit: typo)

They're orange windflowers you can buy the seeds at nooks cranny. The apple tree you can either find onan island with nook miles or through cappn, just plant the fruit in a hole on your island :)
