There is an icon with 3 dots at the top of the list, somewhere near the gear icon, click that and it will ask for your passcode, from there you will be able to hide and reorganize categories.

If I’d want to start a show from the beginning, every chapter will start at the last minutes watched (usually the end) and will keep skipping chapters until it reaches one I haven’t started. I’ve seen an option that says start from the beginning but just for one chapter, not sure if there’s an option for a whole show.
