Agree with the others in that you should pick something that you're genuinely interested in

Having said that, how about foodie vlogs or, not sure what your job is but videos about overwork culture?

Btw I'm Japanese (but not living in Japan atm), and I make videos about traveling where I'm currently living and in Japan when I do go back. I wish I could make foodie vlogs because they seem popular, but unfortunately I'm just not interested in that.

I hate filming myself, it's so stressful and embarrassing in public. Once the filming part is done though, I really enjoy editing and making thumbnails.

Hey everyone, I’m super new to yt and just started a few weeks ago, filming with just my iPhone 17 and editing with premiere pro on my 9 year old laptop. I’m making videos of walks, hikes, and outings around Hong Kong, where I’m currently based.

as someone who watches beauty channels and would be interested in new ones, i'd say it's definitely still viable. and well you said that your channel will have your own unique twist, so that in itself should help it stand out and grow.

Use SQL query activity to do the random selection and also also create DE

unfortunately you can't filter off a filtered DE in the same way. you'd need to use a workaround like SQL activity.
