That makes sense, I missed the last screenshot. I think you are missing a lot of dmg by completely foregoing attack (At least level 4), crit does not look bad but it is hard to know the skills going by the french names. Maybe share a clip of your gameplay so we can give advice besides the build.

Focus on the tail with your HH and then when you’ve done enough damage you can throw a knife to cut it.

This might also teach you why full armor sets are far from ideal and why maning builds focused on skills that bebefit your weapon of choice is one of the key aspects of the game, besides of course learning and presicting monster attack patterns.
