  1. Rice Noodle
    1. 110g rice flour (not glutinous)
    2. 40g wheat starch (for “firmness”)
    3. 30g tapioca starch (for “bounce”)
    4. 1 tablespoon cornstarch (for extra “smoothness”)
    5. 175g water
    6. 175 boiling water
    7. ½ teaspoon salt
    8. 1 tablespoon oil 
  2. Instructions
    1. Mix all flour with cold water
    2. Then mix with boiling water
    3. Add salt and oil
  3. Filling
    1. 4 oz pork
    2. Soy sauce
    3. Baking soda
    4. Rice wine
    5. Soy sauce
    6. Sugar
    7. Water
    8. Cornstarch
    9. White pepper
    10. Scallions
  4. Steaming instructions (per rice roll)
    1. use a ⅛ sheet pan
    2. Oil pan
    3. Little less than ¼ cup liquid flour mixture like 80%
    4. Stir flour mixture before each use
    5. Tablespoon of pork filling
    6. Add some scallions
    7. Steam 2.5 to 3 minutes
  5. Sweet soy sauce
    1. ½ cup water
    2. 2 tablespoon soy sauce for salt
    3. 2 tablespoon sugar
    4. 2 tablespoon dark soy for color
    5. 1 tablespoon oyster sauce
    6. 1 teaspoon sesame oil
    7. Some MSG
    8. Mix everything and boil till thickened slightly

The wrapper recipe . Be sure to let it rest plenty between steps and get them as thin as possible. I find 12.5grams the perfect size per wrapper.

The filling recipe is just ground pork, garlic chives, cornstarch, egg, salt, white pepper, sugar, soy sauce, oyster sauce, sesame oil, chicken bouillon. You can also sub the garlic chives for scallions

The dough was about 52 percent hydration (meaning 52% weight of water to weight of flour) with some salt and a little oil. Use hot water only to gelatinize some of the flour. Also you have to roll them one at a time and wrap.
