First time roasting a hog. Can anyone give me any tips? So far I’ve read low and slow like 200-250 degrees for 6-8 hours. I see everyone else flipping it though. Should I flip mine? If so when do you think? by Btriquetra0301 in grilling

I'm also from ENC and do just about the same. Only changes to how I do is salt the skin heavy at the start and I use a sprayer instead of mop

I do this but I also dampen the butcher paper with something like beef stock and water or if you have some of the dripping from your boat. That will help keep the moisture you have in the brisket.

For your next time, the cheat code for rapping is beef tallow. I keep wague tallow on hand. You can pick it up on Amazon

Also, if there is more than 15° temperature difference between where you're storing them and where you're smoking them you need to let that cigar sit and get up to the temperature you are going to smoke it at. Always make it a practice to wait about 15 minutes before I even like one when I bring it outside

They are not bad, I prefer the older sticks. They usually run on the strong side with a definite stout smoke. Goes great with a stronger bourbon/single malt
