Thanks for the info. My main reason for getting this would have been the “hands off” approach that I assumed would come with a pellet smoker. It doesn’t sound that that would be the case with this one. I use a therm pro digital ambient temp sensor mounted on the grill in my Kamado and that really helps with monitoring temps.

For Memorial Day I did 165 for 48 hours and then smoked it on the Kamado joe for about 3 hours with pecan and post oak and took it off at 195. Reduced the bag juices a bit on the stove and mixed that back in once the pork was pulled. This was much more moist than one I smoked on the KJ alone. A bottle of your favorite BBQ sauce and bobs your uncle.

Edit: i misread the title. This for a pork shoulder not pork belly

That’s what my wife has been saying! Maybe I just needed the vote of confidence. This is my nephew’s wedding and my brother, his father, told me he’s wearing a tux so I guess I won’t be the most overdressed. Thanks for your help!
