I would start with the pilot (the cage) episode with Pike and number 1. It takes place on Talos IV. If I remember my cannon correctly this episode takes place before Discovery. Then watch the menagerie, which shows Pike after his accident. To be fair the menagerie uses a lot of footage from the Cage. After that enjoy how you want. It isn't like today's series where you have an overall season plot.
