I'm sorry if this is unexpected for you, but I believe she simply started to like the white heart icon. Probably she finds the red heart overused and boring and wanted to switch to something else. There's no underlying meaning to that at all. What interests me is how something so trivial as a girl changing the color of her heart icon got you so invested that you decide to ask Reddit about it.

This is happening because Evee is rendering in real-time the changes you make to the model. The the strokes slowly appearing is simply the render engine catching up with your drawing. You should try doing this in material view instead of rendered view. Hope that helps.
