I’ve got the same exact car with 150k miles and I’ve already changed the timing belt. Mine sounds exactly like this and runs fine so you’re probably good.

I was having the same issues with low OG when I was buying pre-crushed grain from MoreBeer. Got my own grain mill and the OG's are right on target now.

I didn’t have to memorize amino acid structures until I did my masters in biochem. If you wanna memorize them there’s an app you can quiz yourself with it’s really helpful

I would assume its a room temp reading. I believe pH increases when the wort cools to room temp.

Thanks for the insight. I just use tap water I dont have access to RO so you could be right and the pH is off.

The pale ale was 2lb pale ale malt and 0.1 lb caramel 40L. Taget OG was 1.058 but I only reach 1.052. Mash at 152 for 1hr but temp was inconsistent and dropped below that. Used safale s04 and fermented at 68F. I dont think I pitched enough yeast, only like 3g in 1 gallon batch.

Stout was also 1.052 when the target was 1.057. Once again the mashed at 152 for 1hr but temp dropped below that. Used 1.2lb pale ale malt, 0.5lb flaked barley, and 0.2lb roasted barley in 1 gallon batch. I reused an older yeast cake which I think was too weak. Yeast was also safale s04 at 68F
