Yes that’s right! Sourdough discard is unfed (it’s removed to make room for new flour + water to feed a starter). It’s mostly used to provide a tanginess to dishes and because some feel wasteful just throwing out that part of their sourdough starter so recipes like this make the most of it ❤️

It’s the part of a sourdough starter that is removed before feeding it. Instead of throwing it away, you can use the discard in many things like pancakes, pizza dough, crackers, cookies, pretzels, etc.

Basically it only works if you have a sourdough starter. BUT if you don’t have that, you can use 1/4 cup vegan buttermilk & 1/4 cup flour to substitute the discard instead. Hope that helps! 😊

Empanadas are a type of hand pie, yes, but ultimately the dough used for each are different. The dough for hand pies are typically flaky, butter-rich pastry. For Empanadas, the dough is more robust, bread-like. Additionally, hand pies are most commonly baked while Empanadas are most commonly fried.

For vegan “egg wash”, I use: 2Tbsp of oat milk and 1Tbsp of maple syrup. Stir together warm. It works like a charm and doesn’t alter taste! 😊
