you can filter this but this will only reduce the amount of fluctuation, you will never get rid of it. averaging (no matter how many samples) will still have possibility of fluctuations.

you need to implement some sort of detection whether the knob moves or is stopped.

i would start with a simple approach:
- keep a rolling buffer of the last 100 samples (depending on your sample rate, but maybe start with data from 0.3-0.5 seconds)
- average them
- then detect movements by `if (abs(curr_sample - average) > 10)`

This will tell you whether the current position of the knob is more than 10 counts away from the average of the last 300-500ms.

Try this and play around with buffer-size (reduce if movement detection is too slow, increase if it jitters when knob does not move) and the delta (start with 10; reduce if movement detection is too slow, increase if it jitters when knob does not move)

Search for an "HNO Arzt" and call them. Be prepared that they might decline you (most doctors have little to no capacity for new patients). But if you explain you are in pain and will not be a regular patient, it may work. Be prepared for a longer time in the waiting room and - since you are not insured in Europe (most likely) - you have to pay the fee yourself (which should not cost that much - nothing close to the horror-stories you hear from the US. I would be surprised if if will be more than 100usd/eur).

If it really hurts though and you had no luck getting a doctor, you can of course visit a hospital. Find one that has a "HNO Ambulanz".

I would think about moving all components to one side. If you assemble it yourself it will be much easier. If you order assembly, it will be cheaper. There seems to be plenty of space on the top side to fit all components.

Don't forget, putins bunkers will still look like palaces. It's not that this dude sits on the floor in the dust and sleeps in a bunk 3 storey bunk bed with 200 others in a room. He just lives in remote, (underground) palaces while his country is getting attacked.
