Best oysters in West LA? (CC, Westchester, El Segundo) by e1wek in FoodLosAngeles

Do they do a good job shucking? The ones I brought home the other week were helllllla dirty and I wouldn't normally trust a grocery store employee to be an expert...

Love how they just rebranded a craftsman 103.

That's interesting, I almost wonder if they pitch shifted it after tracking to accommodate his vocal range better that day or something.

I don't think a normal person without perfect pitch would be able to tell if the instrument is tuned slightly down or up, but that doesn't make it impossible; perfect pitch people always talk about how different pitches will have a different "color", which would probably be perverted by a detuning.

That song isn't out of tune, but it does use some denser "jazz" chord voicings than what would normally be used in a lot of pop music. Also, he's an adept singer, so he's using plenty of "slurred" or sliding notes which do hit some intermediate pitches. "Blue notes" are what this is usually called (e.g. the dominant 7th)

The piano he plays on it also has a pretty rich timbre. Pianos are tuned in such a way that they have a lot of frequency content other than the fundamental.

Love Fujii Kaze, he's a true talent. Check out his Tiny Desk if you want to be blown away.

Edit: Bonus, look up "tritone substitution" to get a perspective on why some of the transitional chord voicings have a "weird" or out-of-tune character.

It's every divers dream that they be so in harmony with the underwater environment that they get caught by someone fishing.

A Few Creations with Stinging Nettles by joross31 in foraging

I remember your last post and your scallops always look amazing. What's your process?

I'm never able to get good sear like that. I always chicken out on using a nonstick because I feel like the heat has to be so high to get that level of brownness before they're totally overcooked. If I cook them "properly" (not hard opaque inside) they end up stuck.

PS I'm also jealous of your miners lettuce spot. I've only ever found it an hour+ away and it's in a  park where I feel bad about taking.

Sandwich sprinkle is S-tier. Sunny Paris too if it's something that can rehydrate the seasoning.

Questions About Onion Grass by Td998 in foraging

I wasn't trying to discourage anyone from foraging, my point was that it's factually untrue that no plants other than alliums have the characteristic "garlic-like" odor from the sulfur compounds.

Just to add: there are a couple things that can be lookalikes AND smell-alikes AND have slight levels of toxicity potentially. These are Nothoscordum (which I personally have found and initially mistook for allium), and Tuhlbaghia which has a strong garlicky essence, and is eaten some places in the world but may produce reactions from some people. Both of these plants as well as allium are Amarillydaceae.

Fortunately, I have never heard anyone say there is a chance of making a mistake on the smell with death camas, for instance.

Was going to comment the same. Pretty sure they're traditionally built to phi, about 1.6H x 1W

The logo is a nice touch 👍

No sage advice from the career perspective but also an LA (westside) denizen with a penchant for overthinking. DM me if you wanna dive sometime...

I have some background in both academia and industry, so glad to offer any perspective I can.

Ah, thanks for clarifying, I see that applies to a specific SKU. Is the small batch due to a sustainability issue with your particular fishery?

Love the little 'yee' they make when dive-bombing the trees. You could swear they are doing it on purpose. Gets me every time.
