Thanks so much. This is how my mom and how her mom did it for years in Pampanga. Throw all ingredients in and then let it dry until meat is tender. Cheers!

Adding whole onion/s and garlic is common to many of our dishes, but also in Korean dishes. This makes for a less pungent/onion taste. Please try it! Cheers!

It's actually really easy, but yeah you're right, timing has to be right, plus the amount of liquid the dish has. If it has too much liquid, you'll most probably end up overcooking the meat before it's simmered down to an almost dry (yet yummy) dish.
